Turkey and Mango Salad
200g snow peas 1 telegraph cucumber 3 spring onions 4 handfuls cos lettuce 6 slices cold roast turkey 2 mangos, peeled and sliced 1/2 cup roasted cashews or peanuts, roughly chopped 2 tbsp chopped coriander a few basil leaves Sesame Lime Dressing 2 tbsp lime juice 1 tsp sesame oil 1 tsp mirin

Drop the snow peas into a pot of boiling water for 1 minute, then drain and refresh under cold water. Thinly angle-slice the cucumber and spring onions. Place in a large bowl with lettuce.
To make the Sesame Lime Dressing, shake together lime juice, sesame oil and mirin in a small jar.
Gently toss salad with dressing. Layer onto a serving platter with the turkey and mango slices, then sprinkle with nuts and herbs to serve.
