tiramisu with a twist
For coffee jelly:- 500ml coffee- 125 gr sugar- gelatine (4 leaves)Tiramisu cream:- 500 ml mascarpone (room temperature)- 500 ml cream- 150 sugar- 5 egg yolk- 3 leaves gelatineCookie, streusel (8 personen)- 120 gr flour- 150 gr cold butter (its very important that the butter is cold and in small cubes, otherwise the batter is getting to soft)- 50 gr brown sugar- 150 gr white sugar- 10 gr cinnamon- 150 gr almond powder- 150 gr flour- 10 gr vanille

For coffee jelly:
- 500ml coffee
- 125 gr sugar
- gelatine (4 leaves)

Tiramisu cream:
- 500 ml mascarpone (room temperature)
- 500 ml cream
- 150 sugar
- 5 egg yolk
- 3 leaves gelatine

Cookie, streusel (8 personen)
- 120 gr flour
- 150 gr cold butter (its very important that the butter is cold and in small cubes, otherwise the batter is getting to soft)
- 50 gr brown sugar
- 150 gr white sugar
- 10 gr cinnamon
- 150 gr almond powder
- 150 gr flour
- 10 gr vanille


For coffee jelly:
put the coffee(espresso/Nespresso) in pan and warm it up with the sugar until sugar is dissolved. Put the gelatin in cold water and let it get soft. When soft squeeze the water out and put it with the coffee. When dissolved put the coffee in sallow dish (1 cm high coffee jelly) and put it in the fridge for 3-4 hours.

Tiramisu cream:
Put the cream in a pan with the sugar until dissolved en cooks. take off fire. In a other bowl you have the egg yolks. put a little bit of the cream mixture withe the egg yolk and mix well. then put the egg mix with the cream mix. Put this for 10 sec on fire, but it may not cook (83 degree)! take of fire and put the gelatine in (first let the gelatine get soft in cold water) put this mixture in fridge for 4 hours.
after 4 hours the mixture is stiff, put it in kitchen aid en mix to get soft creamy mixture. Put the mascarpone in (room temperature and remove all extra moister off the mascarpone before putting it in mixture) and mix well. Put it back in fridge.

Cookie, streusel (8 personen)

mix all the ingredients with hand, it should looks like sand.Mix it until the dough comes together.
spread it on oven paper 1 cm thick. cut the dough before oven time into 1cmx1cm and put it back in fridge for 10 min to get firm.
Then put the oven on 180 degree and baking time is approximately 10-20 min until crispy and golden brown. Let it get cold before using.

Serving:
first put a little bit of cream in bowl, then a lear of cookies. onto of that the coffee jelly and finish it with cream layer. garnish with cacao
