Annabel Langbein Tangy Whipped Guacamole Recipe
Tangy Whipped Guacamole
1/4 - 1/2 red onion, depending on size 1 clove of garlic1 1/2 avocados juice of half a lemon (or lime) 3 slices of jalapeno 1T extra virgin olive oil 1/2 tsp rock salt lots of freshly ground black pepperchopped coriander

1/4 - 1/2 red onion, depending on size
1 clove of garlic

1 1/2 avocados
juice of half a lemon (or lime)
3 slices of jalapeno
1T extra virgin olive oil
1/2 tsp rock salt
lots of freshly ground black pepper

chopped coriander
Blitz the onion and garlic in a food processor until finely chopped. Add the avocado, lemon juice, jalapeno, oil, salt and pepper and blitz until creamy and relatively smooth (the onion will leave lumps).

Toss the mixture into a serving dish and top with chopped coriander (chop it with a sharp knife so as not to bruise it). Eat!

NB: a lot of these ingredients can be adjusted to taste. In fact, pretty much everything except the avocado and olive oil. Knock yourself out!
