Tamari-Roasted Almonds
2 cups raw almonds 1 tbsp tamari or Japanese soy sauce 2 tbsp neutral oil, eg grapeseed

Preheat oven to 180°C. Place almonds on a baking tray. Pour over tamari or Japanese soy sauce and oil and mix through evenly. Spread almonds evenly in dish and roast until fragrant and crisp, about 15 minutes. Cool before storing in a sealed jar. They will keep for several weeks.
Variation:
This method also works well with sunflower seeds.
