Sweet Feijoa and Ginger Sauce
500g feijoas, peeled and diced ¼-½ cup sugar, to taste 2 tbsp water 50g crystallised ginger, chopped 2 tsp cornflour 2 tbsp dry sherry or fruity wine

Place feijoas, sugar, water and ginger in a microwave container or pot. Cover and cook for 5 minutes, stirring well after 3 minutes. Mix cornflour and sherry and add to the pot. Cook a further minute to thicken. Keeps for about a week in the fridge. Freezes well.
