Speedy Chilli Lime Dressing
¼ cup freshly squeezed lime juice 2 tbsp fish sauce 1 tbsp sugar 1 tbsp neutral oil 1 tsp oyster sauce 1-2 small hot red chillies, seeded and finely diced finely grated zest 1 lime 1 kaffir lime leaf, finely shredded (optional)

Shake ingredients together in a small jar. Cover and chill if not using. Dressing will keep in the fridge for 2 weeks.
