Sesame Prawn Toasts
6 slices white toast bread, crusts removed 250g / 8 oz raw prawn / shrimp meat, finely chopped ¼ cup Speedy Mayo or other good-quality mayonnaise 1 tsp sesame oil salt and ground black pepper 1 tbsp sesame seeds To garnish a sprig of chives (optional)

Preheat oven to 180ºC / 350ºF and line a baking tray with baking paper for easy clean-up.
Cut bread slices into quarters. Mix prawn / shrimp meat with mayonnaise, sesame oil and salt and pepper. Spread onto bread and sprinkle with sesame seeds. Place on prepared baking tray and bake until toast is golden and crispy (about 15 minutes). Best enjoyed hot from the oven. Garnish with chives, if using.
