Rich Tomato Sauce

Made with canned tomatoes, this is a useful sauce to make in the winter when tomatoes are out of season. It’s so versatile that I’ll often double or treble the recipe and freeze it in one-cup batches.

Rich Tomato Sauce
2 x 400g/14oz cans chopped tomatoes 3 cloves garlic, crushed 1 cup red wine or vegetable stock 1 cup water 2 tbsp tomato paste 1 tbsp sugar 1 tsp chopped rosemary leaves 1 tsp chopped thyme leaves salt and ground black pepper, to taste

About 2 cups
  • 2 x 400g/14oz cans chopped tomatoes
  • 3 cloves garlic, crushed
  • 1 cup red wine or vegetable stock
  • 1 cup water
  • 2 tbsp tomato paste
  • 1 tbsp sugar
  • 1 tsp chopped rosemary leaves
  • 1 tsp chopped thyme leaves
  • salt and ground black pepper, to taste

Combine all ingredients in a large pot and simmer, uncovered, for 30 minutes, stirring now and then.
