Quick and Easy Lemon Drizzle Cake
For the cake:8 oz Butter8 oz White Caster Sugar (okay to use brown)8 oz Self Raising Flour4 Large Eggs 1 and a half tsp Baking PowderZest of 2 lemonsFor the icing: Juice of 2 Lemons110g icing sugar

15 - 20 mins. (Depending on oven settings)

8
For the cake:

8 oz Butter
8 oz White Caster Sugar (okay to use brown)
8 oz Self Raising Flour
4 Large Eggs
1 and a half tsp Baking Powder
Zest of 2 lemons

For the icing:

Juice of 2 Lemons
110g icing sugar
Start by pre-heating your oven to 180 degrees before preparation.

Step 1 - Add the butter into a bowl and beat for 2 minutes or until smooth, then add the sugar and beat until well combined.

Step 2 - mix the baking powder in with the flour and add half of it to the mixture along with 2 eggs

Step 3 - Add the rest of the flour and eggs along with the zest of 2 lemons.

Obviously you can use any cake tin, but I like to use a bread tin.

Line your tin with grease proof paper / parchment paper and pour the mixture in.
Bake for 15 - 20 mins or until you poke a skewer in and it comes out clean.

While it's still hot, remove from tin

Mix lemon juice and icing sugar together and poke holes in the cake and pour the juice all over it.

ENJOY!

Daniel, I have just baked this cake and it took 40 minutes, I am sure there is a typo...

I have made this cake a few times. It takes about 40 mins to fully bake for me. It is a really delicious cake, I make no changes to this recipe at all other than the baking time :)

I have just finished baking this cake. Baked it at 200°C forgot to reduce to 180 or maybe I did 🤔 however it baked at 15min mark and smells amazing 😊 also used Google to convert from Oz to cups.

Hi Their Annabel The lemon cake you have on here is not very good . I followed the recipe to the letter and found in didnot cook in the middle in that 20 mins maximum time .So i cooked it longer and sadly it over cooked and it was dry . I know all ovens are different and was surprised with this happening. I have seen others comment about this recipe also . What went wrong . I did find another lemon cake recipe in an old recipe book my mum had and that one turned out great . Could be the power thank you Irene

Please can you convert to grams. Also I used plain flour and this works much better. I also cooked it a lot longer

Same as the other comments, the cake took double time in my oven too, had to turn the oven temp down to 170c as I was worried the cake would burn, maybe there is a typo with Annabel timing of 15 to 20 mins.

Wow!While this did take twice as long to bake as the recipe said?This was simply spectacularly delicious! YUM!! Thank you so much for this recipe BakerZoe-I loved it and know I will be making this many times in the future for my family.Awesome!

I made this cake in a loaf tin today. At the 20 min mark (at 170 degrees in a gas oven) it was very runny in the middle. It took about twice as long (possibly longer) for me to get it to a edible consistency. Can you please advice?
