Pumpkim and nuts cake
Ingredients:2 cups sugar;4 eggs;1 cup of sunflower oil (may be a little less):3 cups flour;100 g grated coconut;500 g grated raw pumpkin;1 cup of nuts;1 large orange rasp;1 teaspoon baking powder;1 teaspoon of cinnamon.Mascarpone cream:1 pack of mascarponepowdered sugar to taste3 tablespoons orange liqueur (you can choose another liqueur)

Ingredients:

2 cups sugar;
4 eggs;
1 cup of sunflower oil (may be a little less):
3 cups flour;
100 g grated coconut;
500 g grated raw pumpkin;
1 cup of nuts;
1 large orange rasp;
1 teaspoon baking powder;
1 teaspoon of cinnamon.

Mascarpone cream:

1 pack of mascarpone

powdered sugar to taste

3 tablespoons orange liqueur (you can choose another liqueur)
Preparation:

Start by hitting the whole eggs well with the sugar. Then add the oil and the orange zest, stir well. Mix the grated coconut with the flour and the yeast, wrap in the dough. Add the grated pumpkin (triturai on a processor) and the walnuts in rough pieces, stir so that everything is well incorporated. Place in a previously greased margarine and sprinkled with flour (I used mold release).
