7-8 medium-sized potatoes, peeled and cut into chunks 2-3 tbsp butter ¼ cup hot milk or cream salt and ground black pepper

Boil in salted water until tender. Drain thoroughly. Use a potato masher or fork to mash with butter and hot milk or cream, mashing until creamy and smooth. (Do not use a food processor). Season to taste. If not using at once, cover and chill. Cooked mash can be reheated for 5 minutes in a microwave. Add a little more hot milk if needed.
Replace half the potatoes with peeled, chopped kumara (sweet potato).
