200g mushrooms, thinly sliced 3-4 tbsp good-quality mayonnaise or aioli 1 tbsp finely chopped parsley leaves salt and ground black pepper, to taste 6 large slices sourdough or 18 small rounds French bread

Preheat oven to 180˚C fanbake and line an oven tray with baking paper for easy clean-up. Mix the mushrooms with just enough mayo or aioli to coat them, stir in parsley and season to taste with salt and pepper. Pile onto the slices of bread on the prepared tray and bake until the bread is crunchy on the base and the mushrooms are golden (20-30 minutes). Serve hot.
