A star 'cook ahead' dish is the easiest way to feed a crowd - especially if time is tight. Braised Oxtails with Red Chilli Beans is one of those brilliant dishes that actually tastes better if cooked a day or two ahead of time. The Braised Oxtails need to be made one or two days ahead, cooled and the fat removed before reheating. Freeze if not using within two or three days. The Crème Anglaise can be kept covered in the fridge for up to a week and gently reheated when required.
ON THE DAY
Reheat oxtails. Make mash and steam broccoli to serve with the oxtails. Bake the apples and reheat the Crème Anglaise.
