make-ahead meal

A star 'cook ahead' dish is the easiest way to feed a crowd - especially if time is tight. Braised Oxtails with Red Chilli Beans is one of those brilliant dishes that actually tastes better if cooked a day or two ahead of time. Baked Apples make a great dessert as you can stretch them to feed impromptu guests. The Crème Anglaise is a handy Fridge Fixer to make ahead of time and reheat when needed.

WELL AHEAD

The Braised Oxtails need to be made one or two days ahead, cooled and the fat removed before reheating. Freeze if not using within two or three days. The Crème Anglaise can be kept covered in the fridge for up to a week and gently reheated when required.

DAY BEFORE

ON THE DAY

Stuff apples.

FINAL PREPARATIONS

Reheat oxtails. Make mash and steam broccoli to serve with the oxtails. Bake the apples and reheat the Crème Anglaise.
