picnic in the park

I love to eat outdoors - the food always tastes so good. A summer picnic makes for a really relaxed gathering - there's no table to dress or washing up to do, and generally you can share the food prep. The key with picnic fare is to ensure it's portable - and hearty. Fresh air always seems to sharpen people's appetites. Choose dishes that transport well - pies, quiches and the like. A cooked chicken makes a versatile picnic dish, but be sure to keep it cool with plenty of ice. I like to include a thermos of hot, strong coffee to ensure a sweet treat before the drive home. Magic!

WELL AHEAD

Make the Chocolate Truffle Fudge Cake and store in a sealed container in the fridge.

DAY BEFORE

Prepare the Bacon and Egg Pie.

ON THE DAY

Make the Pan Bagna. Pack salad veges, such as cherry tomatoes, cucumber chunks, radishes and snowpeas, into containers to serve with the pie.

FINAL PREPARATIONS

Make a thermos of strong, hot coffee to enjoy with the chocolate slice. Pack everything into airtight containers and pack your picnic hamper, making sure everything arrives at your destination safely!
