Macerated Tamarillos

These tamarillos make a terrific breakfast fruit to serve with yoghurt and cereal.

Macerated Tamarillos
6 ripe tamarillos boiling water ½ cup honey or sugar 1 tsp vanilla essence

  • 6 ripe tamarillos
  • boiling water
  • ½ cup honey or sugar
  • 1 tsp vanilla essence

Prick tamarillos with a knife in a few places, and place in a bowl. Pour over boiling water, stand 5 minutes then drain and peel and discard skins. Slice thinly into a non-corrosive bowl. Stir through honey or sugar and vanilla. Stand for at least 30 minutes, until a rich dark juice has formed. Chill until ready to serve. Macerated tamarillos will keep in the fridge for about a week.
