Lychee Cocktails

For an alcohol-free version serve these pretty lychee ice cubes topped with chilled soda or home-made lemonade instead of vodka or gin.

Lychee Cocktails
565g can lychees 1 tsp finely grated ginger 3 tbsp sugar 3 tbsp fresh lime juice 2-3 nips chilled vodka or gin per serve (keep the bottle in the freezer)

Makes:
enough ice cubes for 14-18 cocktails
  • 565g can lychees
  • 1 tsp finely grated ginger
  • 3 tbsp sugar
  • 3 tbsp fresh lime juice
  • 2-3 nips chilled vodka or gin per serve (keep the bottle in the freezer)

Drain lychees and place juice in a pot with ginger and sugar. Bring to a simmer, stirring to dissolve sugar. Allow to cool. Pour syrup into ice cube moulds and place a lychee in each. Chill for at least 3 hours until frozen, or up to 48 hours in advance.

To serve, place a lychee ice cube into each chilled glass and top with chilled vodka or gin.
