Flattened, boneless chicken breasts or thighs take just a few minutes to cook over high heat. A range of marinades can be use - this one is light and aromatic with the flavours of lemon, garlic, rosemary and oregano.
Italian Grilled Chicken with Lemon and Herbs
5 boneless chicken thighs, or 4 single boneless chicken breasts ¼ cup lemon juice 2 cloves garlic, crushed 1 tsp chopped rosemary 1 tsp chopped oregano salt and ground black pepper

Place each breast or thigh between plastic wrap and flatten to a thin schnitzel using a rolling pin or a heavy, flat implement. Combine all the remaining ingredients, except salt, and mix through the chicken. Marinate for at least 15 minutes or up to 4 hours in the fridge. Season with salt. Barbecue, pan fry or grill for 5-7 minutes until chicken is golden and cooked.
