Home style Indian Chicken Curry
Chicken – 750 gms (1 whole breast) cut into bite size piecesGinger- crushed, 1 tbspGarlic- crushed, 1tbspOnion- 1 large finely chopped or blended into a paste Tomato- 2 small – chopped - or use Annabel's Harvest sauce!Capsicum- 1 sliced Cumin – 1 ½ TspCoriander- 1 ½ TspTumeric- ½ tspGaram masala- 1tspPaprika- 1tspCurry powder- 1 tsp Coriander leaves- chopped for garnishSalt- 1 ½ tspOil for cooking

Chicken – 750 gms (1 whole breast) cut into bite size pieces
Ginger- crushed, 1 tbsp
Garlic- crushed, 1tbsp
Onion- 1 large finely chopped or blended into a paste
Tomato- 2 small – chopped - or use Annabel's Harvest sauce!
Capsicum- 1 sliced
Cumin – 1 ½ Tsp
Coriander- 1 ½ Tsp
Tumeric- ½ tsp
Garam masala- 1tsp
Paprika- 1tsp
Curry powder- 1 tsp
Coriander leaves- chopped for garnish
Salt- 1 ½ tsp
Oil for cooking
•Heat oil in a pan
•Add ginger, garlic and onion and sauté
•Add tomato and continue to cook for a couple of minutes
•Add the chicken and stir in well
•Add the dry spices one at a time and stir well
•Add salt
•Simmer and cover and stir occasionally
•If the curry starts looking dry, add a cup of water and simmer covered with a lid
•When the chicken is almost cooked, add the capsicums and stir it in
•Once the chicken is completely cooked, garnish with fresh coriander leaves and serve with rice or roti
