Fresh Tuna Patties with Red Pepper Aioli
300g piece freshest boneless tuna or salmon 2 tbsp red pepper aioli zest of 1 lime 1 tsp salt and several grinds pepper a little neutral oil eg grapseed, to cook red pepper aioli to serve

Using a very sharp knife cut the tuna or salmon into very fine dice. Mix through the red pepper aioli, lime rind and salt and pepper. Shape mixture into 10-12 patties.( or 4 large patties)
Heat a little oil in a large frypan and shallow-fry patties for 11/2 minutes. Flip over and cook for another minute.
