Flash-Roasted Pesto Salmon

This speedy salmon is the ultimate dinner-party dish – it takes just 6-8 minutes in a hot oven to cook through. The same treatment works well for white fish fillets.

Flash-Roasted Pesto Salmon
6 x 200g / 6½ oz pieces boneless, skinless salmon fillet, cut from the thick end 6 tbsp good-quality basil pesto 3 tbsp capers 18 cherry tomatoes finely grated zest of 1 lemon 2 tbsp olive oil salt and ground black pepper

  • 6 x 200g / 6½ oz pieces boneless, skinless salmon fillet, cut from the thick end
  • 6 tbsp good-quality basil pesto 
  • 3 tbsp capers
  • 18 cherry tomatoes
  • finely grated zest of 1 lemon
  • 2 tbsp olive oil
  • salt and ground black pepper

Preheat oven to 220°C / 425°F and line a large, shallow baking dish with baking paper for easy clean-up.

Arrange salmon pieces in a single layer in the prepared baking dish. Spread about 1 tbsp pesto over each piece. Scatter the capers, tomatoes and lemon zest over the salmon, drizzle with olive oil and season with salt and pepper. Roast until just cooked through (6-8 minutes) and serve immediately.

Dear Annabel, I am not quite sure how to contact you. I would like to find the recipe for the potatoe dish as well as the fennel vegetable dish that accompanied this beautiful flash-roasted pesto salmon? What do I need to do? I have already subscribed? Jennifer

Hi Annabel, I haave subscribed to your new letter because I was so impressed with the TV show and actually downloaded the recie for the Flash-roasted Pesto Salmon. I have also downloaded the recipe for the pesto but cannot find the recipe for the potato dish wich sounds delicious nor the fennel recipe that you served with this same dish. Could you please advise where I may find these? Thank you Jennifer

Wonderful recipe! Made it last night and doubled the portions to serve 8 guests and got rave reviews! I made the pesto fresh using Annabel's pesto recipe. So easy to make and tastes delicious! Everyone went home with the link to this site. Thanks for these wonderful, healthy, and delicious recipes. I will definitely be trying more.

Made this the other night, extremely tasty! Have used pesto before with salmon but the capers add that extra zing to it! The salmon just melted in my mouth.
