Feijoa Cake with Lemon Drizzle Icing!
100g butter3/4 cup sugar2 eggs2 cup flour1 tsp baking powder1 tsp baking soda1 cup mashed feijoa1/2 cup sultanas2 tbsp milkIcing:50g sour creamRind of 1 lemonJuice of 1/2 a lemon1 1/2 cup icing sugar

100g butter
3/4 cup sugar
2 eggs
2 cup flour
1 tsp baking powder
1 tsp baking soda
1 cup mashed feijoa
1/2 cup sultanas
2 tbsp milk

Icing:
50g sour cream
Rind of 1 lemon
Juice of 1/2 a lemon
1 1/2 cup icing sugar
Preheat oven to 180ºC.
Using a hand mixer beat butter and sugar until pale and creamy. Beat in eggs one at a time making sure to mix in well for a few minutes.
Sift in dry ingredients.
Stir in feijoa, sultanas and milk.
Pour batter into a lined cake tin and bake for about 45 minutes.
For the icing beat sour cream until soft, add lemon and icing sugar and continue to beat until creamy.
Drizzle over cooled cake and slice. Delicious!
