Easy Oven Fries

The brilliant thing about homemade oven fries is that there is very little fat or oil needed to cook them to get a crunchy tasty result. Pre-cooking the potatoes means you can get ahead of the game and have them ready to pop into the oven to crisp 40 minutes before serving.

Easy Oven Fries
8 medium-large floury potatoes, such as agria 3 tbsp rice flour or plain flour 3 tbsp extra-virgin olive oil 1 tsp flaky salt ground black pepper

  • 8 medium-large floury potatoes, such as agria
  • 3 tbsp rice flour or plain flour
  • 3 tbsp extra-virgin olive oil
  • 1 tsp flaky salt
  • ground black pepper

Preheat oven to 200°C (400°F) and line a shallow oven dish with baking paper for easy clean-up.

Scrub the potatoes and then boil in salted water for 10 minutes. Drain and cool. Cut into chips or wedges. Transfer to a large bowl.

Add the flour, olive oil, salt and pepper and toss to combine evenly. Spread out to a single layer on prepared dish (you may need to use two). Bake until crispy and golden (40-45 minutes).
