Serves:

250 g butter
180 g castersugar
280 g all purpose flour
1 whole egg, save a bit for glazing
Pinch of salt
15 grams of vanilla sugar or a teaspoon vanillaextract
Preheate the oven to 220 degrees Celsius.
Mix all ingredients in a bowl, I prefere to do that with the foodprocessor so the dough stays cool.
Put a piece of bakingpaper in a flat tin, in Holland we use a flat pan with a hight of max.3 cm and the pan has a size of 24 cm.
Put the dough in the tin en press firmly into the base and sides. Glaze the dough with egg and makes lines with a fork.
Bake the boterkoek in the middle of the oven for 20 minutes at 220 degrees C.
Serve the boterkoek when is totally cold. Deliceus with coffee, tea or chocolatmilk.
