Cucumber Tom Collins

Pair the refreshing taste of cucumber with mint and a splash of gin in my twist on this classic cooling cocktail.

Cucumber Tom Collins
¼ cup caster sugar ½ cup lemon juice 1½ cups gin, chilled 1 telegraph cucumber, unpeeled 1 lemon, very thinly sliced ice cubes soda water, chilled mint leaves, to garnish

  • ¼ cup caster sugar
  • ½ cup lemon juice
  • 1½ cups gin, chilled
  • 1 telegraph cucumber, unpeeled
  • 1 lemon, very thinly sliced
  • ice cubes
  • soda water, chilled
  • mint leaves, to garnish

Combine sugar, lemon juice and gin in a jug and stir until sugar is dissolved. Purée or juice ¾ of the cucumber and strain into gin mixture. (This base can be prepared in advance and chilled until ready to serve.) Thinly slice remaining cucumber and set aside.

To serve, place a handful of ice in highball glasses, top with most of the cucumber and lemon slices then more ice to ¾ fill glasses. Top with the rest of the cucumber and lemon slices. Add a tray of ice to the gin mixture, stir, then strain into prepared glasses. Top with soda and mint leaves.
