Annabel Langbein Crispy Blueberry Muffins Recipe
Crispy Blueberry Muffins
1 1/2 cups self raising flour, sifted 3/4 cup brown sugar 3/4 cup blueberries 1/2 tsp cinnamon1 egg, beaten 3/4 cup milk, warmed 100g butter, melted 1tsp lemon zestraw sugar

1 1/2 cups self raising flour, sifted
3/4 cup brown sugar
3/4 cup blueberries
1/2 tsp cinnamon

1 egg, beaten
3/4 cup milk, warmed
100g butter, melted
1tsp lemon zest

raw sugar
Preheat the oven to 200C.

Mix the flour, cinnamon and brown sugar together with a whisk, making sure there are no lumps of sugar left. Add the blueberries, being gentle, and stir them in. Mix the egg, milk, butter and lemon zest together (the milk ought to be warm enough that the butter does not solidify when they are combined).

Combine the two mixtures, and fold together with a spatula until there are no dry ingredient pockets left. Be very gentle: overmixing will yield rubbery muffins!

Pour the mixture into greased muffin tins, filling right to the top. Sprinkle each muffin with raw sugar.

Bake for 15-20 minutes, or until a skewer inserted comes out clean.

These blueberry muffins are delicious. I used frozen blueberrys - no issues and only had demerara sugar to sprinkle on top - yum. Thanks for the recipe.

These are really yummy! To save a bit of time mixing, I sift the brown sugar mixed with a little of the already measured flour to get out the lumps

Made these to enjoy during the World Cup cricket semi finals and enjoy them we did. They are crispy when hot but mine lost the crispness when cold. Still lovely though

Agreed, some of the best muffins in years. I doubled the recipe and they were fabulous, also used my own organic free range eggs and lemons, organic 'real' milk, mix of organic flours, light organic sugar, Lewis Road Creamery butter - very yummy indeed :) Don't think they're going to keep very well though :D

Yes, you need to double the recipe, but very easy to make. I used frozen blueberries. Scrummy!

These are delicious and VERY easy to make! Took me all of 20mins to put together. BUT these only made 8 in my medium size muffin tin, so I would recommend that you double the mixture, otherwise you will end up making these twice like me :)
