Creamy Chipotle Mayo Dip
2 eggs 2 tbsp white vinegar finely grated zest and juice of 1 lime 2 tbsp chipotles in adobo sauce 1 large clove garlic, peeled 1 tsp salt ground black pepper 2 cups neutral oil, such as grapeseed oil

Place all of the ingredients into a tall jug. Lower a hand wand immersion blender to the bottom of the jug, then blend until you have a smooth thick creamy sauce. If you're using a food processor instead, blend everything except the oil and then add the oil in a slow stream with the motor running until thick and creamy.
Stored in the fridge in a sealed container chipotle mayo will keep for several weeks.
