Chicken and Mushroom Pot Pie
2 tbsp olive oil 400g button mushrooms, wiped with a damp cloth 3 strips bacon, diced 8-10 baby onions, peeled and halved 8-10 cloves garlic (1 small head), peeled and halved lengthways 400g can tomatoes in juice, chopped 1½ cups red wine 3 cups good chicken stock 1 tsp finely chopped fresh rosemary 2 tsp finely chopped fresh thyme 2 tbsp finely chopped Italian parsley 2-3 bay leaves 1 tsp salt ground black pepper, to taste 3 tbsp cornflour 2 tbsp port or red wine 800g boneless, skinless chicken thighs, quartered 400g puff pastry 1 egg, beaten, or a little milk to glaze

Heat oil in a large, heavy pan. Add mushrooms and bacon. Brown well, then remove and set aside. Add onions and garlic to pan and cook gently 8-10 minutes or until onion is softened and starting to brown.
Add tomatoes and their juice, wine, stock, herbs, seasonings and browned mushrooms and bacon. Simmer gently 20 minutes. Combine cornflour and port or wine and mix into sauce, stirring over heat until lightly thickened. Adjust seasonings to taste. Cool. Sauce can be prepared ahead of time to this point, cooled and chilled or frozen.
Heat oven to 200°C . Place raw chicken in a large, shallow baking or pie dish. Pour over cooled sauce and mix until evenly combined.
Roll out pastry to cover top of dish. Cut a 3cm strip of pastry and run it around the edge to form a double layered rim. Crimp this with your thumbs or a fork. If desired garnish top with pastry leaf cut-outs. Brush with egg or milk to glaze and cut a few steam vent holes. Bake 40-45 minutes or until pastry is golden and crispy.
Alternative Serving Suggestion
I prefer to cook the pastry on top of the pie and have it soft and gravied on the underside, probably for nostalgic reasons as that's how my mother always made her pies. If you prefer, cook the pastry separately, either the same size as the pie, or as single size pieces.
