Beef and Rocket Sandwiches
4 slices toasted sourdough bread or bread of your choice 2 tsp horseradish cream 1 tbsp olive oil 1 tbsp white balsamic vinegar 1 tsp sugar 1 small handful rocket / arugula or spinach leaves 4 slices cold roast beef 3 tbsp tomato relish salt and ground black pepper, to taste

Spread two pieces of toasted bread with horseradish cream. Whisk oil, vinegar and sugar in a medium bowl. Toss leafy greens in oil and vinegar mix and layer onto bread with slices of beef and tomato relish. Season with salt and pepper and top with remaining pieces of toasted bread.
