Balsamic Beetroot Relish
3 medium beets (800g), peeled and coarsely grated 1 red onion, finely chopped 2 tablespoons dried currants ½ cup sugar 1 teaspoon ground allspice ½ cup balsamic vinegar ¼ cup water 1 tablespoon olive oil 1 teaspoon salt ½ teaspoon pepper

Makes:
3 cups
  • 3 medium beets (800g), peeled and coarsely grated
  • 1 red onion, finely chopped
  • 2 tablespoons dried currants
  • ½ cup sugar
  • 1 teaspoon ground allspice
  • ½ cup balsamic vinegar
  • ¼ cup water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Place all ingredients in a pot. Cover and bring to a boil over high heat, then reduce heat to a low simmer and cook for 20 minutes. Remove lid and carry on cooking until liquid has all but evaporated and beets are tender and glossy.

Stored in the fridge, it will keep for a couple of weeks. Great with cold meats and as the base for a savoury tart with feta and rosemary.

Will it keep if stored in airtight jars

Put some extras in such as good pinch of saffron and some mixed spices and chopped tomatoes with white, malt and balsamic vinegar. A bit extra brown sugar.. tastes delicious thanks.

Making my first batch now, smells great, ive all so got my second batch of tomato relish going at the same time, my kitchen smells sooooooo good lol 😍😍 if u haven't tried making the tomato relish u must give it a go also

Just making it now. I didnt have any currants so i am using cranberries. I think it will be very nice with blue castello cheese on a porterhouse steak πŸ˜€

We pulled our beetroot today and I made your relish. We live at Lake Mahinerangi so a quick trip to Lawrence 4 Square for allspice and currants. It's on the stove in the last stages - I can't stop trying it. It's gorgeous - thank you. If you ever get this way -call in I'mm make YOU something! Yvonne
