Avocados with Tomatoes and Balsamic Dressing
Balsamic dressing: 3 tbsp olive oil 1 tbsp balsamic vinegar 1 tsp dijon mustard ½ tsp sugar salt and ground black pepper To serve: 2 just ripe avocados (½ avocado per serve) 8 cherry tomatoes (2 per serve)

Prepare Balsamic Dressing by combining the ingredients.
Choose perfect, just-ripe avocados, allowing ½ per serve along with 2 cherry tomatoes. At serving time, halve the avocados and remove stones. Quarter cherry tomatoes and pile into avocado cavities, drizzle with Balsamic Dressing and serve.
