Avocado Salsa

Use this guacamole-like avocado salsa with Corn Tortilla Chips or layered into Avocado Salsa Timbales. It's also great with Gluten-Free Corn Fritters and Spicy Seafood Fritters.

Avocado Salsa
green part of 1 spring onion, very finely chopped 1 clove garlic, crushed a pinch of chilli flakes finely grated zest of 1 lime 1 tbsp lime juice 1 large just-ripe avocado, finely diced salt and ground black pepper, to taste

Makes:
1 cup
  • green part of 1 spring onion, very finely chopped
  • 1 clove garlic, crushed
  • a pinch of chilli flakes
  • finely grated zest of 1 lime
  • 1 tbsp lime juice
  • 1 large just-ripe avocado, finely diced
  • salt and ground black pepper, to taste

In a small bowl combine spring onion, garlic, chilli and lime zest and juice. Gently stir in avocado and salt and pepper. Best used within 2-3 hours.
