green part of 1 spring onion, very finely chopped 1 clove garlic, crushed a pinch of chilli flakes finely grated zest of 1 lime 1 tbsp lime juice 1 large just-ripe avocado, finely diced salt and ground black pepper, to taste

In a small bowl combine spring onion, garlic, chilli and lime zest and juice. Gently stir in avocado and salt and pepper. Best used within 2-3 hours.
