16 asparagus spears about 8 thin slices prosciutto or bacon, rind removed 2 tbsp extra virgin olive oil salt and ground black pepper, to taste finely grated or shredded zest of ½ a lemon

Preheat oven to 200°C/400°F fanbake. Snap off tough ends of asparagus and trim spears to a neat edge.
Cut prosciutto slices or bacon rashers in half lengthways to create long, thin strips. Wrap a strip of prosciutto or bacon in a tight twirl around each piece of asparagus.
Arrange in a single layer in a shallow oven dish, drizzle with oil and turn carefully to coat. Season with salt and pepper and scatter with lemon zest.
Roast, shaking the pan now and then, until the asparagus is just tender and starting to brown at the tips (about 10-15 minutes). Alternatively, cook in a hot frypan or on a hot barbecue grill, turning frequently, until just tender. Serve hot or at room temperature.
