I was unable to catch the recipe for Vin d'orange that you made. I am a winemaker in San Diego California and would love to make a small batch using the formula you used. I have researched many different recipes. The ingredients all are similar, but the proportions are all very different.
Do I have to use vodka? Or will grappa be as good?
Some recipes call for seville oranges, others call for just oranges, yet others suggest a combination of sevilles, lemons and sweet oranges. Do you have a preference?
Do you recommend bottling and aging before consuming? It seemed as though you prepared and consumed on the same day. Some recipes say that after 40 days of maceration, to strain, filter, bottle and age for for a minimum of four months but more like a year. Thoughts?
I would love input from you and the community before I begin. The weather really starts heating up here in September and would love to have this for entertaining or vendimia (vendange).
