Despite chillies not being my favourite food I made Annabel's Chilli Jam last year and thought I'd died and gone to Heaven.
I decided to do double this time. Chopped the chillies, peppers and ginger and then began to have second thoughts. Surely 625g of sugar x 2 is too much sugar???
Can anyone tell me if I'm on the right track by doubling the entire recipe or should I make allowances???

Great to hear you love the chilli jam!
Best to stick to the recipe, as it needs the sugar to thicken the jam. Remember you making double - so don't feel too bad about the sugar!!

put a little sugar just to neutralize the hot that will make a good-balanced sauce...sure it helps.
