Many many years ago you sent me your recipe for Christmas Cake. It was the best. I now want to make it for my son and daughter-in-law to be for their wedding. But it calls for glace pineapple which I can't get. I have been told that dried or candied pineapple won't work because it will ferment, especially with the brandy in it. I see in your other recipes that you combine candied pineapple and brandy so could I use one of those recipes or should I use the Miracle 3 ingredient one?? It may be kept in the freezer for up to a year.
Glace fruit is harder to come by these days but is available at gourmet food stores, such as Farro.
All of the Christmas Cakes will be fine in the freezer - so best to choose the one you like the flavour of the best.
Has anyone found glace fruits in their local shops?
You can make your own glace'd pineapple.
I do for special cakes just using tinned pineapple.
