Lemon Grass & Chilli Baked Chicken
4 chicken thigh quarters 3 tsp finely grated lemon grass ½ cup sweet chilli sauce ½ cup water 2 tbsp fish sauce finely grated zest and juice of 2 limes ½ tbsp minced fresh ginger 3 cloves garlic, crushed 1 tsp sugar

  • 4 chicken thigh quarters
  • 3 tsp finely grated lemon grass
  • ½ cup sweet chilli sauce
  • ½ cup water
  • 2 tbsp fish sauce
  • finely grated zest and juice of 2 limes
  • ½ tbsp minced fresh ginger
  • 3 cloves garlic, crushed
  • 1 tsp sugar

Preheat oven to 180°C. Place chicken in a shallow baking dish. Combine remaining ingredients and pour over. Bake until chicken is cooked through and golden, 45-50 minutes.

Hi Annabel, I made this last week with boneless free range chicken, absolutely loved it,as did all the family. So easy to make too, even for someone who doesn't like cooking usuallly.

My mother-in-law is a big fan of your cooking so I decided to try this recipe on your website. My husband and I loved it, easy and full of flavour especially when it's difficult to find the right ingredients here in Saudi Arabia!
