Lemon Grass & Chilli Baked Chicken
4 chicken thigh quarters 3 tsp finely grated lemon grass ½ cup sweet chilli sauce ½ cup water 2 tbsp fish sauce finely grated zest and juice of 2 limes ½ tbsp minced fresh ginger 3 cloves garlic, crushed 1 tsp sugar

Preheat oven to 180°C. Place chicken in a shallow baking dish. Combine remaining ingredients and pour over. Bake until chicken is cooked through and golden, 45-50 minutes.
