Fruit Salad with Vanilla Syrup

A platter of fresh fruit is my dessert of choice on an everyday basis. With clean, fresh flavours and a pique of sweetness, fruit satisfies our after-dinner palates. A simple vanilla syrup, which will keep for ages in the fridge, adds a finishing touch that makes the simplest fruit bowl seem like a treat.

Prep 5-10 minutes
Cook 10 minutes
Serves 4

6 kiwifruit, peeled and sliced
1 ripe green melon, peeled, seeded and sliced
small bunch green grapes
1 punnet strawberries, hulled and sliced

Place fruit in a serving bowl and drizzle over ⅓ cup syrup.

Vanilla Syrup
1 cup water
¾ cup sugar
2 vanilla pods, split lengthways, or 2 tsp pure vanilla extract
zest of ½ lemon

Heat sugar and water over medium heat, stirring occasionally, until sugar dissolves. Add split vanilla pods and lemon zest. Simmer gently for 10 minutes. Cool before using. Makes 1 cup.

Storage: Syrup will keep in the fridge for months.
