Roast Lamb Rack with Chilli Mint Glaze

Serves 4-5

2 lamb racks, trimmed and cut into sections of 3-4 ribs

Chilli Mint Glaze
2 tbsp Thai sweet chilli sauce
2 tbsp chopped mint leaves
2 tbsp fish sauce
1 tbsp olive oil
2 cloves garlic, crushed
½ tsp salt and grinds black pepper

Combine glaze ingredients and mix through lamb. Chill for at least 30 minutes or up to 12 hours. Preheat oven to 220°C. Place lamb in a shallow roasting dish and bake until done to your liking, about 15-20 minutes. Stand meat for 5 minutes before serving. Serve with baked vegetables and a fresh green salad.
