Texture is paramount when it comes to pasta. Good-quality dried pasta, either organic or artisan produced, will hold its texture and, if it has been produced by bronze extrusion, will have tiny ridges on the outer surface that allow the sauce to cling rather than slip off.

Serves 2

200g dried pasta
1 cup chopped rocket
2 large tomatoes, diced
120g feta, crumbled
2 tbsp capers
2 tbsp chopped olives
zest and juice of 1 lemon
2 tbsp olive oil

Cook pasta to packet instructions. Meanwhile, combine all other ingredients in a bowl. Drain cooked pasta and toss through sauce.
