Basil Grilled Salmon
Grilling or roasting fish in a very hot oven produces a succulent result in only minutes. It’s a great treatment for dense, meaty fish such as salmon, monkfish or hapuku. If you are worried about timing, slightly undercook the fish and reheat for a minute or two when ready to serve.

4 fresh boneless fish fillets, eg cod, snapper or monkfish
Basil Topping
4 tbsp basil oil
zest 1 lemon
½ tsp salt and grinds of pepper
Preheat oven to 220°C fan bake. Place fillets on a baking tray lined with baking paper or parchment. Mix basil topping ingredients and spoon evenly over fish to coat. Cook fish until it is no longer translucent in the centre and ‘gives’ when lightly pressed in the thickest part, about 8 minutes. Serve with green vegetables and potatoes or rice.
